Baked Brie with Honey & Thyme-Roasted Red Cherries

Spread lashings of creamy, melted Brie together with sweet red cherries onto fresh sourdough bread.

(Serves 3)

You’ll need:

1 x 125 g Emborg Brie

300 g tinned red cherries; drained

100 ml honey

2 sprigs fresh thyme

10 ml cooking oil

Sourdough bread; to serve

Method:

1. Preheat the oven to 180 °C and line a small baking sheet with greaseproof paper.

2. Place the cherries, honey and thyme into a medium-sized ovenproof dish and roast the cherries for about 10–15 min. until the cherries and the honey become sticky, then remove from the oven.

3. Set the cherries aside and allow to cool.

4. Rub the Brie with a little oil and place it on the lined baking sheet.

5. Bake the Brie for about 6–10 min. The Brie is ready when it feels completely soft and melted through when pressed.

6. Carefully lift the Brie with an egg lifter off the sheet and place it on your serving dish, then smother it with the cooled cherries.

7. Add more fresh thyme, if preferred, and serve immediately with slices of fresh sourdough bread.

Alternatively:

Use Camembert instead of Brie and prepare it exactly the same way. Roast fresh gooseberries with thyme and honey instead of red cherries.
