Banana and onion salad

Thanks to Antoinette Schoeman from Riebeeckstad, who got this recipe from her grandmother. "This recipe is a hit," she says. "I’ve been making it for years and my guests enjoy it hugely.”

Serves 4-6 Preparation time: 20-30 min Cooking time: 10 min

  • 20 ml (4 t) butter
  • 3 onions, sliced in rings
  • 750 ml (3 c) boiling water
  • 30 ml (2 T) cake flour
  • 30 ml (2 T) curry powder
  • 5 ml (1 t) mustard powder
  • 125 ml (½ c) water
  • 125 ml (½ c) white wine vinegar
  • 3 ml (generous ½ t) salt
  • 3 ml (generous ½ t) pepper
  • 45 ml (3 T) brown sugar or 50 ml golden syrup
  • 8 bananas
  • 2 hard-boiled eggs, sliced (optional)

1 Heat the butter in a pot and fry the onions until soft. Add the boiling water.

2 Mix the remaining ingredients except the bananas and eggs, and add to the onions.

3 Stir constantly until the mixture comes to the boil and thickens slightly. Leave to cool.

4 Slice the bananas and add to the sauce.

5 Add the hard-boiled eggs (if using).
