Banana bread

This moist and delicious banana bread is easy to make. Serve it with our white chocolate butter to lift it out of the ordinary.

Serve 4-6 Preparation: 15 min Cooking: 40 min

2 ripe bananas, mashed

2 eggs

180 ml (¾ c) milk

60 ml (¼ c) oil

5 ml (1 t) vanilla essence

500 ml (2 c) flour

250 ml (1 c) brown sugar

10 ml (2 t) baking powder

5 ml (1 t) ground cinnamon

WHITE CHOCOLATE BUTTER

150 g butter, at room temperature

100 g white chocolate, melted

2 ml (½ t) ground cinnamon

Preheat the oven to 180 °C. Grease a 25x12 cm loaf tin.

1 Mix the bananas, eggs, milk, oil and vanilla essence in a medium bowl.

2 In a separate bowl mix the flour, sugar, baking powder and cinnamon.

3 Beat the wet ingredients into the dry ingredients until combined. Pour into the greased loaf tin and bake for 40 minutes or until done.

4 White chocolate butter: Beat the butter vigorously in a large bowl then beat in the chocolate and cinnamon until well blended. Chill in the fridge to harden slightly. Serve with the banana bread.
