Barbecue chicken

Spiced and coated with barbecue sauce, this chicken is tasty and easy to make.

Serves: 6 Preparation: 5 min Chilling: 1 hr Cooking: 40 min

  • 60 ml (¼ c) olive oil
  • salt and black pepper
  • 2,5 ml (½ t) paprika
  • 2,5 ml (½ t) cumin
  • 1 ml (¼ t) cayenne pepper
  • 2 cloves garlic, chopped
  • ½ onion, chopped
  • 12 chicken thighs
  • 250 ml (1 c) barbecue sauce

1. In a small bowl, mix together the olive oil, salt, pepper, paprika, cumin, cayenne pepper, garlic and onion.

2. Pour over the chicken and ensure it’s well coated. Place on a small rimmed baking sheet and into the refrigerator to marinate for at least 1 hour.

3. Bake for 30 minutes. Remove the chicken from the oven and coat with the barbecue sauce. Return to the oven for 10 minutes or until sticky.
