Basil pesto pasta with vegetables

Kick your week off with this delicious quick-and-easy pasta dish!

 Serves 4

Preparation time: 5 min

Cooking time: 15 min

30 ml (2 T) oil

400 g asparagus, green beans and baby marrow mix

1 onion, chopped

125 ml (½ c) vegetable stock

salt and freshly ground black pepper

400 g spaghetti

toasted almonds

grated pecorino cheese

PESTO

30 g fresh parsley

30 g fresh basil

2 garlic cloves, crushed

salt and pepper

60 ml (¼ c) olive oil

1 Heat the oil in a pan over high heat and cook the vegetables until tender. Stir in the onion and stock simmer for a few minutes.

2 Cook the spaghetti in boiling salted water according to the packet instruction.

Pesto: Purée the herbs, garlic, salt, pepper and olive oil to form a paste. Stir into the hot pasta and serve with the vegetables, nuts and cheese.
