Beef and waterblommetjie stew

A delicious traditional stew with waterblommetjies (small water flowers) - a very popular dish in the Western Cape

Serves 6

Preparation time: 5 min

Soaking time: 1 hour

Cooking time: 1 hour

500 g waterblommetjies

30 ml (2 T) oil

500 g beef goulash cubes

2 onions, chopped

3 garlic cloves, chopped

2 green chillies, chopped

15 ml (1 T) lemon juice

500 ml (2 c) beef stock

salt and freshly ground black pepper

1    Wash the waterblommetjies and soak in salted water for 1 hour.

2    Heat the oil in a saucepan and brown the beef and onions, sautéing until the onions are soft.

3    Stir in the garlic, chillies, lemon juice, stock and drained waterblommetjies. Simmer for 1 hour or until the meat is tender, shaking from time to time to prevent meat from sticking to the saucepan. Do not stir as this will break up the waterblommetjies.

4    Season with salt and pepper and serve with rice.
