Beef stew

It takes a little bit of planning and some time to prepare - but a good stew is simply one of the best dishes to share

Serves 6

Soaking time: overnight

Preparation time: 10 min

Cooking time: 2 hours

500 g (2 c) samp and beans

30 ml (2 T) flour

salt and pepper

1 kg stewing beef

30 ml (2 T) oil

4 carrots, sliced

500 ml (2 c) chicken stock

4 potatoes, peeled and cubed

2 cans (400 g each) mushroom soup

1 Soak the samp and beans in water overnight.

2 Cook in simmering water for 2 hours or until soft and all the water has been absorbed.

3 Meanwhile season the flour with salt and pepper and dust the beef with the flour.

4 Heat the oil in a saucepan. When hot, brown the meat in batches. Return all the meat to the saucepan, add the carrots and cook, stirring, for 2 minutes.

5 Pour in the stock and simmer for about 1 hour or until the meat is tender.

6 Add the potatoes and one can of the mushroom soup. Simmer for 20 minutes or until the potatoes are cooked.

7 When the samp and beans are cooked, add the second can of mushroom soup, heat through and serve with the beef stew.
