Black bean and pumpkin chilli

Add a little spice to the dinner table with this delightful dish

Serves 6

Preparation time: 10 min

Cooking time: 45 min

15 ml (1 T) oil

400 g beef goulash (cubes)

1 onion, chopped

1 yellow pepper, chopped

3 garlic cloves, chopped

500 ml (2 c) chicken stock

300 g pumpkin, cubed

1 can (410 g) chopped tomatoes

10 ml (2 t) chilli powder

5 ml (1 t) ground cumin

2 cans (400 g each) borlotti beans

salt and pepper

1 Heat the oil in a pan over medium heat, add the beef and brown for 15 minutes.

2 Add the onion and yellow pepper and sauté until the onion is soft and translucent.

3 Stir in the garlic and the remaining ingredients. Cover and cook over low heat for 35 minutes or until meat is tender.
