Braai pizzas

One gets that perfect smoky wood-fired pizza oven taste with this clever way of making pizza.

Makes 3 large pizzas Preparation time: 30 min Cooking time: 10-12 min

  • 3 large readymade pizza bases

Seafood

  • 60 ml (¼ c) sweet chilli sauce
  • 250 ml (1 c) grated mozzarella
  • 250 ml (1 c) cooked seafood mix
  • 2 finely chopped garlic cloves
  • fresh coriander

Meat

  • 45 ml (3 T) sundried tomato pesto
  • 250 g boerewors, rolled into frikkadels and fried until done
  • 250 ml (1 c) grated mozzarella
  • 1 sliced red onion
  • fresh rocket

Vegetarian

  • 45 ml (3 T) sundried tomato pesto
  • 250 ml (1 c) grated mozzarella
  • 8 halved cherry tomatoes
  • 250 g longstemmed broccoli
  • 50 g cream cheese roll
  • sliced fresh basil

1 Cover each pizza base with toppings of your choice, seafood, meat or vegetarian.

2 Arrange each base and topping on a kettle braai or on a grid over moderate coals. Close the lid or cover with aluminium foil and braai for about 10-12 minutes until the bases are crisp and the cheese melted. Serve immediately
