Bread and boerewors salad

Serves 4 

1 large French loaf

olive oil for shallow-frying

300 g boerewors

250 g ripe tomatoes, quartered

1 small red onion, sliced

100 g Cheddar cheese, coarsely grated

dressing of your choice

1 Preheat the oven to 160 °C.

2 Break the bread into chunks and put on a large baking sheet. Toast the bread until golden brown and crisp – about 10 minute – and allow to cool.

2 Heat a little olive oil in a frying pan and fry the boerewors over medium heat until cooked. Allow to stand for a few minutes then cut into 2 cm lengths.

3 In a mixing bowl combine the boerewors pieces, tomatoes, red onion and cheese then transfer to a large serving platter.

4 Scatter the toasted bread chunks on top and drizzle with dressing.
