Never enjoyed Brussels sprouts before? Here’s the recipe that could change your perception about the humble miniature cabbage.

Serves: 6 Preparation: 15 min Cooking: 30 min

  • 2 slices thick bread
  • 100 g bacon, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, smashed
  • 2 sprigs thyme
  • 60 ml (¼ c) chicken stock
  • 30 ml (2 T) olive oil
  • 500 g Brussels sprouts
  • salt and pepper
  • handful pecorino cheese, grated

Preheat oven to 200°C.

1 Tear the bread into pieces. In a pan over medium heat fry bacon until crisp. Add the onion, garlic and thyme and cook for a minute. Pour in the stock, add the bread and coat with the mixture; set aside.

2 In a pan with oil over medium heat cook the Brussels sprouts until slightly browned.

3 Mix the sprouts with the bread mixture in an ovenproof dish. Season, sprinkle cheese over and bake for 15 minutes or until Brussels sprouts are soft.
