Caramel apple ring cake

Serves: 6

220 g butter

250 ml (1 c) caster sugar

4 eggs

375 ml (1 ½ c) self-raising flour

60 ml (¼ c) milk

5 ml (1 t) vanilla essence

1 can (410 g) of apples

Caramel sauce

125 ml (½ c) caster sugar

10 g butter

250 ml (1 c) cream

Preheat the oven to 180°C. Grease a ring-cake tin.

In a large mixing bowl cream the butter and caster sugar together until fluffy. Add the eggs one at a time, beating in between.

Fold in the flour, milk and vanilla essence until well blended.

Pour half the mixture into the cake tin and layer the apples all around.

Cover with the rest of the batter.

Bake in the oven for 50 minutes or until a skewer comes out clean.

Cool on a wire rack before removing from tin.

Caramel sauce

Heat the caster sugar in a saucepan over medium heat.

When it starts dissolving add the butter and cream, and stir vigorously.
