For meatless Monday try this alternative to mac and cheese – simple and delicious cauliflower cheese.   Serves 4

2 big heads cauliflower, cut into florets

60 g butter

45 ml (3 T) flour

750 ml (3 c) milk

3 egg yolks

7 ml (1½ t) mild English mustard

5 ml (1 t) Worcester sauce

salt and pepper

125 g Cheddar cheese, grated

50 g mozzarella cheese

1        Preheat the oven to 200 °C. Grease a large ovenproof dish.

2        Bring a pot of salted water to the boil, add the cauliflower and cook for 2 minutes. Drain and transfer to the ovenproof dish.

3        Put the butter and flour in a pot and heat to melt the butter. Cook, stirring, for 2 minutes. Remove from heat and gradually whisk in the milk to form a smooth sauce. Return to low heat and cook for 3 minutes. Remove from the heat and beat in the egg yolks, mustard and Worcester sauce. Season with salt and pepper.

4        Mix the two cheeses and stir half into the sauce. Pour over the cauliflower and top with the remaining cheese mix.

5        Bake for 15 minutes or until golden. Serve with a variety of roast vegetables.
