Cheese bread and butter pudding

A savoury twist on a traditional sweet treat!

Serves: 2 Preparation: 10 min Standing: 20 min Cooking: 30 min

  • 25 g butter
  • 1 large leek, thinly sliced
  • 5 thin slices of white bread from a large loaf
  • 75 g bacon bits, chopped
  • 150 g cheddar and mozzarella cheese, grated
  • 3 eggs, beaten
  • 250 ml (1 c) milk
  • salt and black pepper

Preheat the oven to 180 ºC and grease a baking dish.

1 In a saucepan over medium heat, melt the butter and fry the leek for 5 minutes. Cut the bread into triangles and place 3 halves of the triangles on the bottom of the dish.

2 Scatter half the leeks and the bacon on top. Cover with the cheese and arrange the remaining bread triangles over the surface.

3 Beat the egg and milk until well combined and season with salt and pepper. Pour the egg mixture evenly over the bread and scatter the rest of the leeks and bacon on top.

4 Cover and allow to stand for 20 minutes, sprinkle with more cheese and bake for 30 minutes or until puffed and golden brown.
