Cheese croquettes with salad

What a great idea for you lunch box!

Makes 24

Preparation time: 15 min

Cooling time: 1 hour

Cooking time: 20 min

5 ml (1 t) oil

150 g rindless bacon, finely chopped

180 g butter

250 ml (1 c) flour

500 ml (2 c) milk

250 ml (1 c) grated Cheddar cheese

salt and pepper

flour for dusting

1 egg, beaten

breadcrumbs for coating

250 ml (1 c) oil

salad and toast to serve

1 Heat the oil in a pan over medium and cook the bacon until crisp. Melt the butter in a pot over medium heat, add the flour and mix to form a roux (smooth paste). Add the milk, stirring constantly until a thick sauce forms. Remove from the heat and stir in the cheese and cooked bacon. Pour onto a greased baking tray and cool for an hour.

2 Fill a saucepan with oil and heat over medium heat. Grease your hands with a little cold oil and roll the bacon and cheese paste into sausage-shaped croquettes.

3 Dust the croquettes with flour, dip in the beaten egg, then in the breadcrumbs, back in the egg and finally in the breadcrumbs.

4 Fry in the heated oil until crisp and golden. Serve on bread with salad.
