Cheesy Potato Soup

This recipe is the perfect easy meal when your cupboards are empty and you’re in need of a yummy, hearty dish.

You'll need:

2 kg potatoes

500 g ham

500 ml cream

350 g Cheddar cheese

Peel and cut potatoes into small cubes, then boil until soft. Add some cream and mash potatoes. Add to blender to make a purée-like base then put into a clean pot. Cut ham into small cubes and add to potato mixture. Bring to boil and simmer. Finely grate cheese and add to potato and ham mixture. Let it simmer until cheese melts. Add cream to dilute the soup, or until desired consistency is reached. Best served with delicious cheese sticks!
