Cheesy sausage tart

Sage and sausage go so well together and make this tart so delicious.

SERVES 4 Preparation time: 10 min Baking time: 30-40 min

  • 6 pork sausages, meat removed from the casings
  • oil
  • 1 onion, finely chopped
  • 1 tomato, skinned and chopped
  • pinch sugar
  • salt and pepper to taste
  • 5 ml (1 t) dried mixed herbs
  • 2 ml (½ t) dried sage
  • 4 extra-large eggs
  • 500 ml (2 c) grated Cheddar cheese
  • salad to serve

1 Preheat the oven to 180 °C and grease  a round ovenproof dish .

2 Roll the sausage meat into balls and fry in oil until brown on the outside Remove from the pan.

3 Fry the onions in the same pan until soft and transfer to the dish Scatter the chopped tomato on top and season with sugar, salt, pepper and herbs. Arrange the meatballs on top.

4 Whisk the eggs, season with salt and  pepper and pour over meat mixture. Scatter the cheese on top and bake for 30-40 minutes or until the egg mixture has set. Serve with a salad
