Chicken akni

A wonderful combination of spices, resulting in a beautiful, aromatic dish.

Serves 6 Preparation time: 10 min Cooking time: 30 min

  • 500 ml (2 c) rice, uncooked

    salt

  • 30 ml (2 T) oil
  • 2 onions, chopped
  • 3 garlic cloves
  • 2 ml (½ t) grated ginger
  • 4 chicken breasts, sliced
  • 5 ml (1 t) chilli powder
  • 2 ml (½ t) cumin seeds
  • 2 ml (½ t) coriander seeds
  • 2 ml (½ t) ground cinnamon
  • 2 ml (½ t) ground cardamom
  • 2 ml (½ t) turmeric
  • handful of raisins
  • handful of fresh coriander, chopped

1 Cook the rice in boiling salted water until done.

2 Heat the oil in a pan, add the onions, garlic and ginger and fry for 2 minutes.

3 Add the chicken and cook for 5 minutes.

4 Add the spices and cook for another 2 minutes.

5 Add the raisins and cooked rice, cover and set aside to steam for 15 minutes.

6 Just before serving add the chopped coriander.
