Chicken and lentil soup

A soup guaranteed to become a firm family favourite

Serves 6

Preparation time: 5 min

Cooking time: 30 min

30 ml (2 T) oil

1 onion, chopped

3 garlic cloves, chopped

1 red chilli, chopped

3 chicken breasts, sliced

5 ml (1 t) turmeric

10 ml (2 t) ground cumin

2 bay leaves

1 can (410 g) chopped tomatoes

1 can (410 g) brown lentils

750 ml (3 c) chicken stock

salt and pepper

1 Heat the oil in a saucepan over medium heat, add the onion, garlic and chilli and sauté until soft.

2 Add the chicken slices and sauté until lightly browned. Stir in the spices and bay leaves and cook for 1 minute.

3 Add the tomatoes, lentils and stock. Simmer for 15 minutes. Season with salt and pepper and serve hot.
