Chicken and mayonnaise wraps

Serves 4 

1 cooked chicken

1 onion, grated

1 small carrot, grated

1 small celery stalk, finely chopped

2 large gherkins, finely chopped

30 ml (2 T) finely chopped parsley

125 ml (1/2 c) mayonnaise

125 ml (1/2 c) plain yoghurt

2 ml paprika

salt and freshly ground black peppepr

lettuce leaves

4 soft tortillas

1 ripe tomato, diced

Debone the chicken and discard the skin, fat and bones.

Dice the meat and mix with the onion, carrot, celery, gherkins, parsley, mayonnaise and yoghurt.

Season with paprika, salt and pepper.

Arrange the lettuce leaves on the tortillas and spoon the chicken mayonnaise on top of the lettuce leaves.

Scatter the diced tomato on top and roll up the tortillas.
