Chicken and rice bake

A tasty one pot chicken dish perfect for lunch or dinner.

Serves 4

Preparation time: 15 min

Cooking time: 60 min

3 large potatoes, cut into wedges

30 ml (2 T) olive oil

30 ml (2 T) Cajun spice mix

2 onions, sliced

4-6 chicken breast fillets,

cut into strips

500 ml (2 c) cooked rice

60 ml (1/4 c) sweet chilli sauce salt and freshly ground black pepper Preheat the oven to 200 °C.

  1. Spread the potato wedges on a baking sheet and sprinkle on half the oil and half the Cajun spice mix. Roast for 30 minutes or until cooked.
  2. Heat the remaining oil and fry the onions until soft. Add the chicken and the remaining spice mix and fry until done.
  3. Mix the rice, chilli sauce and potato wedges with the chicken and season with salt and pepper. Transfer to an ovenproof dish and bake for 25-30 minutes or until heated through.
