Chicken and sun-dried tomato cannelloni

TOMATO SAUCE

45 ml oil

2 onions, finely chopped

1 kg tomatoes (fresh or canned), chopped

3 garlic cloves, finely chopped

30 ml tomato purée

1 sprig parsley

2 sprigs thyme

1 bay leaf

salt and freshly ground black pepper to taste

5 ml sugar

STUFFING

300 g chicken breasts (skin and bones removed), cut into pieces

60 g bacon rashers, chopped

1 onion, quartered

15 ml olive oil

1 packet sun-dried tomatoes, drained and halved

100 ml grated Cheddar cheese

2 eggs

125 ml thick cream

salt and freshly ground black pepper

pinch of nutmeg

TO COMPLETE

1 packet cannelloni tubes

80 ml grated Parmesan cheese

TOMATO SAUCE

Heat the oil in a shallow saucepan and sauté the onions until lightly browned.
