Chicken burgers with cherry tomato sauce

Makes 4 burgers

Preparation time: 20 min

Cooking time: 15-20 min

CHERRY TOMATO SAUCE

30 ml (2 T) olive oil

250 g small Roma cherry tomatoes

salt and freshly ground black pepper

pinch of brown sugar

60 ml (¼ c) finely grated Parmesan cheese (optional)

CHICKEN BURGERS

4 chicken breast fillets

30 ml (2 T) olive oil

salt and freshly ground black pepper

2 onions, sliced

4 hamburger rolls, halved

100 ml chunky cottage cheese

lettuce leaves

CHERRY TOMATO SAUCE

Heat the olive oil and fry the tomatoes over very high heat until they burst.

Season with salt, pepper and sugar.

Mash the tomatoes with a potato masher or fork and stir in the Parmesan cheese (if using).

Keep the sauce warm while you prepare the burgers.

CHICKEN BURGERS 

Put the chicken breasts on a clean work surface and beat gently with a meat mallet or the heel of your hand. (The flatter the fillets the faster they’ll cook.)

Heat the olive oil in a frying pan and fry the fillets until golden brown and done.

Season with salt and pepper to taste and remove from the heat.

Fry the onions in the same pan over high heat and season with salt and pepper.

Spread one half of each roll with a little cottage cheese and top with lettuce leaves, a chicken breast, fried onions and cherry tomato sauce.
