Chicken Caesar salad

A salad with a lovely combo of warm ingredients - perfect for those in-between days

Serves 4

Preparation time: 10 min

Cooking time: 15 min

2 hot dog rolls

45 ml (3 T) olive oil

salt and freshly ground black pepper

2 chicken breast fillets

3 rashers bacon, chopped

DRESSING

2 garlic cloves, minced

2 anchovies, chopped

60 ml (¼ c) grated Parmesan cheese

60 ml (¼ c) mayonnaise

15 ml (1 T) white wine vinegar

TO ASSEMBLE

1 Cos lettuce

1 avocado, diced

Parmesan cheese shavings

1 Preheat the oven to 180 °C.

2 Make croutons out of the rolls. Tear or cut the rolls into chunks. Spread out on a baking sheet and sprinkle with 30 ml (2 T) of the olive oil. Rub into the bread and season with salt and pepper. Bake for 10 minutes, turning occasionally.

3 Rub the chicken with the remaining oil and season with salt and pepper. Heat a frying pan over medium heat, add the chicken and cook for 5 minutes on each side until done. Check by pricking the chicken with a knife – there should be no pink juices running out. Remove from the pan.

4 Cook the bacon in the same pan until done.

5 Dressing: Mix the ingredients until thick and creamy.

6 To assemble: Tear the lettuce into pieces and transfer to a large bowl. Tear the chicken into strips and scatter over the lettuce with the croutons and bacon. Add the avocado and dressing and toss lightly with your fingertips. Garnish with Parmesan cheese shavings and serve immediately.
