Chicken curry

One dish that is always a guaranteed winner!

Preparation time: 10 min

Cooking time: 30 min

Serves: 6

6 chicken breasts, cubed

60 ml (¼ c) lemon juice

30 ml (2 T) curry powder

salt and freshly ground pepper, to taste

15 ml (1 T) oil

5 ml (1 t) ground all-spice

3 garlic cloves, chopped

3 sprigs thyme

100 g green beans

400 g coconut milk

50 g baby corn

1 green chilli, chopped

1.    Combine chicken, lemon juice and half curry powder in a bowl and season with salt and pepper.

2.    Heat oil in a pan on medium heat, add the chicken without the liquid and cook for 10 minutes.

3.    Stir in remaining curry powder, all-spice, garlic, thyme and beans. Cook, stirring occasionally for 10 minutes.

4.    Pour in coconut milk, corn and chilli. Stir to combine. Simmer for 10 minutes more or until chicken is cooked. Serve with rice.
