Chicken mayonaise vetkoek

This chicken vetkoek is a perfect treat to fill you up any time of day.

Serves 4-6 Preparation: about 25 min Standing time: about 1 hour Cooking time: about 40 min

CHICKEN MAYONNAISE

  • 30 g butter
  • 4 chicken fillets
  • salt and pepper
  • juice and grated zest of 1 lemon
  • 150-200 ml mayonnaise
  • 1 small onion, finely chopped
  • 2 large gherkins, chopped
  • 60 ml (4 T) chopped parsley

VETKOEK

  • 1 kg readymade bread dough
  • oil for deep-frying

1 CHICKEN MAYONNAISE

Heat the butter in a pan and fry the chicken pieces until cooked. Season with salt, pepper and

the lemon juice and zest. Cool and chop coarsely.

2 Mix the chicken with the mayonnaise, onion, gherkins and parsley. Set aside.

3 VETKOEK Leave the dough to rise for 20-30 minutes. 4 Knead the dough on a surface dusted with flour and shape into small balls (the size of golf balls). Place on a floured surface or a tray, in a warm place. Leave to rise for a further 20-30 minutes. 5 Heat the oil. Flatten the balls and fry them in oil until golden brown and cooked. Slit vetkoek. 6 Spoon some chicken mayonnaise into each vetkoek. TIP: Use the filling of your choice for the vetkoek, such as curried mince (see p. 8), salad leaves, tomato and cheese or the all-time favourite, jam and cheese.
