Chicken meatball curry

Just over half an hour to prepare and cook a curry dish guaranteed to be a winner

Preparation time: 10 min

Cooking time: 30 min

Serves: 6

300 g chicken mince

30 ml (2 T) garam masala

salt and pepper

4 garlic cloves, chopped

5 ml (1 t) grated ginger

juice of 1 lemon

SAUCE

5 ml (1 t) oil

1 onion, sliced

2 green chillies, chopped

1 green pepper, diced

410 g (1 can) whole tomatoes

250 ml (1 c) chicken stock

garlic bread to serve

fresh herbs to garnish

1 Mix the chicken mince with half the masala, salt, pepper, the garlic, ginger and lemon juice. Wet your hands, shape into mini meatballs and set aside.

2 Heat oil in a pan over medium and fry the onion, chillies, green pepper and remaining masala for 3 minutes.

3 Add the tomatoes and chicken stock, bring to a boil then simmer for 10 minutes.

4 Gently drop the chicken balls into the sauce and cook for 10 minutes or until chicken is done.

5 Serve on garlic bread and garnish with fresh herbs.
