Chicken meatballs

Blitz it and serve it - a delicious and different way to serve chicken

Serves 4

Preparation time: 5 min

Cooking time: 10 min

6 chicken breasts, cut into chunks

4 garlic cloves

1 red chilli

small handful of fresh coriander

1 egg

80 ml (? c) breadcrumbs

salt and pepper

30 ml (2 T) oil

1    Preheat the oven to 180 °C.

2    Put the chicken in a blender and blitz until minced.

3    Fold in the rest of the ingredients, except the oil, and roll the mixture into balls the size of golf balls.

4    Heat the oil in a pan over medium and fry the meatballs for 3 minutes or until browned. Transfer to a baking sheet and bake in the oven for 5 minutes or until cooked through.

5    Serve with coleslaw and rye bread.
