Chicken sandwiches

When last have you made yourself a very special chicken sandwich like this one?

Serves 6

Preparation time: 15 min

60 ml (¼ c) Greek yoghurt

5 ml (1 t) honey

5 ml (1 t) Dijon mustard

salt and freshly ground black pepper

30 g parsley, stalks removed

3 garlic cloves, chopped

60 ml (¼ c) grated Parmesan cheese

80 ml (? c) olive oil

3 chicken breasts, cooked and shredded

6 seeded rolls

handful of rocket

1 Mix the yoghurt, honey, mustard, salt and pepper in a bowl, stirring until well combined.

2 Blitz the parsley, garlic, cheese and oil until well combined.

3 Combine the yoghurt mixture and parsley pesto and add the shredded chicken.

4 Halve the rolls horizontally. Arrange rocket on the bottom halves, spoon the chicken mixture on top and cover with the top halves of the rolls.
