Chicken stir-fry

Serves 6-8

Preparation time: 10 min

Cooking time: 20 min 

15 ml (1 T) oil

1 onion, sliced

15 ml (1T) minced garlic

3 chicken breast fillets, cubed

500 g frozen stir-fry vegetables

250 ml (1 c) sweet and sour sauce

250 ml (1 c) rice, cooked

1         Heat the oil in a large wok or pan and stir-fry the onion and garlic until the onion is translucent.

2         Add the chicken and stir-fry until cooked, about 5 minutes. Remove from the pan and set aside.

3         In the same pan stir-fry the vegetables until done but still crisp.

4         Return the chicken to the pan, add the sauce and toss lightly until all the vegetables and chicken cubes are coated. Serve with the rice.
