Chicken tortillas

Serves 4

250 g chicken breast fillets, cut into strips salt and pepper to taste or chicken rub 15 ml oil 1 onion, thinly sliced 125 ml cream cheese 125 ml mayonnaise 4 flour tortillas 1 packet lettuce leaves ¼ cucumber, seeded and sliced into thin strips 1 red, green or yellow pepper, thinly sliced

Season the chicken breasts to taste with salt and pepper or chicken rub and stir-fry in hot oil with the onion until just done.

Set aside.

Mix the cream cheese and mayonnaise and spread a little of the mixture over each of the open tortillas.

Arrange the lettuce leaves and chicken, cucumber and pepper strips on one half of each tortilla.

Roll up firmly and heat gently over the fire if desired or serve as is.
