Chicken wraps

Put some fun back into food - with these easy-to-make chicken wraps

Serves 6

Preparation time: 20 min

Cooking time: 30 min

4 chicken breasts, cubed

5 ml (1 t) mixed herbs

5 ml (1 t) paprika

125 ml (½ c) breadcrumbs

1 egg

oil for deep frying

Batter

125 ml (½ c) flour

10 ml (2 t) baking powder

pinch of salt

1 egg

125 ml (½ c) soda water, cold

Dressing

125 ml (½ c) plain yogurt

5 ml (1 t) ginger, grated

2 garlic cloves, crushed

5 ml (1 t) Cajun spice

5 ml (1 t) masala spice

Topping

4 wraps, toasted

handful lettuce, shredded

1 avocado, cubed

2,5 ml (½ t) chilli flakes

Place the chicken in a food processor and blitz until smooth. Add the herbs, paprika, breadcrumbs and egg. Blitz for a few seconds until well combined. Form into small balls and set aside.

Heat the oil in a medium-sized pot over medium to high heat. Mix the batter ingredients together in a bowl until smooth. Add the chicken to the batter and carefully drop in the hot oil. Cook for 5-8 minutes until golden and cooked through.

Mix the dressing ingredients together in a bowl until well combined, cover and place in the fridge.

Fill the tortilla wraps with lettuce, avocado, chicken balls and chilli flakes. Drizzle with the dressing.
