Chickpea and lentil salad

Serves 4

Preparation time: 20 minutes

DRESSING

50 ml olive oil

75 ml (5 T) white wine vinegar

25 ml (5 t) honey

15 ml (1 T) brown sugar

salt and pepper

juice and rind of ½ lemon

SALAD

1 can (400 g) chickpeas, drained

1 can (400 g) lentils, drained

½ cucumber, finely diced

2 tomatoes, finely diced

1 small onion, finely diced

4 gherkins, finely chopped

60 ml (¼ c) mixed fresh herbs, finely chopped

Mix all the ingredients for the salad dressing and pour into a small saucepan.

Bring to the boil, remove from the heat and leave to cool completely.

Mix the ingredients for the salad in a large bowl.

Stir the dressing into the salad.

Serve with bread.
