Choc cup pudding

These delicious, cakey puddings couldn’t be easier to make so it’s no hassle to whip up second helpings.

Serves 4 Preparation time: 5 min Cooking time: 30-40 sec

  • 60 ml (¼ c) cake flour
  • 60 ml (¼ c) sugar
  • 30 ml (2 T) cocoa powder
  • 2 ml (½ t) baking powder
  • 1 egg
  • 45 ml (3 T) oil
  • 5 ml (1 t) vanilla essence
  • 45 ml (3 T) milk
  • ice cream or cream to serve

1 Mix the dry ingredients in a large mixing bowl.

2 Add the egg and mix well.

3 Add the oil, vanilla essence and milk and mix well.

4 Spoon the batter into 4 small cups and microwave for 30-40 seconds until done but still slightly runny.

5 Serve with ice cream or whipped cream.

TIPS:

  • Sprinkle chopped nuts of your choice on the mixture before putting the cups in the microwave. 
  • Add 5 ml (1 t) of coffee powder with the cocoa for a mocha flavour.
