Chocolate beetroot cake

Beetroot cake takes chocolate to a whole new level

Makes 1 large cake

Preparation time: 15 min

Baking time: 45 min

3 beetroot, cooked and peeled

100 g dark chocolate

560 ml (2¼ c) cake flour

80 ml (? c) cocoa powder

pinch of salt

7 ml (1½ t) bicarbonate of soda

170 g butter, softened

320 ml brown sugar

125 ml (½ c) caster sugar

3 eggs

10 ml (2 t) vanilla essence

250 ml (1 c) full-cream milk

10 ml (2 t) apple cider vinegar

15 ml (1 T) oil

1 Preheat the oven to 180°C and grease a 30 cm cake tin.

2 In a food processor blend the beetroot until finely chopped.

3 Melt the chocolate in a double boiler or the microwave and set aside.

4 Sift the flour, cocoa powder, salt and bicarbonate of soda together.

5 Beat the butter, brown sugar and caster sugar until creamy. Add the eggs one at a time, beating well after each addition to incorporate. Add the butter mixture into the flour mixture.

6 In a separate bowl mix the vanilla essence, milk, vinegar, beetroot and oil then add to the cake batter. Mix until well blended.

7 Pour into the prepared cake tin and bake for 45 minutes or until a skewer inserted in the middle comes out clean.
