Chocolate meringue tart

Crunchy, smooth and sweet – the perfect weekend treat.

Serves 6 Preparation: 15 min Baking: 1 hour 12 min

CRUST

  • 200 g chocolate biscuits, crushed
  • 60 g butter, melted

FILLING

  • 310 ml (1¼ c) cream
  • 250 g dark chocolate, chopped
  • 2 eggs
  • 5 ml (1 t) vanilla essence

MERINGUE

  • 6 egg whites
  • 250 ml (1 c) castor sugar
  • 15 ml (1 T) corn flour
  • 15 ml (1 T) white vinegar
  • 15 ml (1 T) vanilla essence

Preheat the oven to 120°C.

1. Crust Mix all the ingredients together and line the bottom of the baking dish.

2. Filling Bring the cream to a boil then pour over the chocolate and let it stand for 5 minutes. Gently stir until smooth.

3. Whisk eggs, vanilla in another bowl, then stir into the melted chocolate.

4. Pour the filling into the crust and bake for 10 minutes.

5. Meringue In a large mixing bowl, whisk the egg whites until stiff peaks form. Gradually add the sugar, 15 ml at a time and whisk well after each addition. Whisk in the corn flour, vinegar and vanilla essence.

6. Spoon the mixture over the chocolate tart, spreading it into a rough circular shape. Put it in the oven for 1 hour. Switch off the oven and allow it to cool in the oven.
