Chocolate treats

These bite-size chocolate logs are irresistible – make a batch and enjoy whenever you crave a snack.

Makes 22 Preparation: 15 min Rising: 1 hour 40 min Cooking: 12 min

  • 7 g dry yeast
  • 180 ml (¾ c) caster sugar
  • 140 ml milk, warmed
  • 4 x 250 ml (4 c) flour
  • 5 ml (1 t) mixed spice
  • 60 ml (¼ c) cocoa powder
  • 5 ml (1 t) ground cinnamon
  • 50 g butter, chopped
  • 125 ml (½ c) warm water
  • 1 egg, lightly beaten
  • 5 ml (1 t) vanilla essence
  • milk for brushing
  • honey to glaze

FILLING

  • 300 g dark chocolate
  • 60 g butter
  • 250 ml (1 c) cream

GARNISH

  • cake sprinkles

1 Line 2 large baking sheets with baking paper.

2 Put the yeast, sugar and milk in a bowl and stir until the yeast has dissolved. Cover and set aside in a warm place for 10 minutes or until frothy.

3 Sift the flour, mixed spice, cocoa powder and cinnamon into a bowl. Use your fingertips to rub in the butter until the mixture resembles fine breadcrumbs.

4 Make a well in the middle. Add the yeast mixture, warm water, egg and vanilla essence. Mix well to form a smooth dough. Cover with clingfilm and set aside in a warm place for 1 hour or until doubled in volume.

5 Turn the dough onto a lightly floured surface. Knead for 20 minutes or until smooth.

6 Divide into 22 equal portions. Shape each into an oval then roll the oval lengthwise to form a log. Transfer to the prepared baking sheets, spacing them 3 cm apart. Cover with a tea towel and set aside in a warm place for 40 minutes.

7 Preheat the oven to 200 °C.

8 Brush the logs with a little milk. Bake for 12 minutes or until golden and done (a skewer inserted in the middle should come out clean). Transfer to a cooling rack and brush with honey.

9 Filling: Heat the chocolate, butter and cream in a small pot over medium heat, stirring until the chocolate has melted. Set aside to cool.

10 Spoon the cooled chocolate mixture into a piping bag. Using a skewer, make a small incision in each log and pipe in the chocolate mixture.

11 Garnish: Cover each log with sprinkles and serve.
