Chocolate volcanoes

These puddings are light and cakey on the outside. Then when you take a spoonful, chocolate flows out like lava. Serve them hot from the oven.

Serves 4 Preparation: 10 min Chilling: 1 hour Cooking: 12 min

  • 165 g butter
  • 165 g dark chocolate
  • 3 eggs
  • 3 egg yolks
  • 160 ml (? c) caster sugar
  • 2 ml (½ t) green apple essence
  • 30 ml (2 T) flour

Grease 4 individual pudding moulds

1 Put the butter and chocolate into a heatproof bowl over saucepan of gently simmering water, stirring until melted.

2 Whisk the eggs, yolks and sugar together until thick. Stir in the essence and fold in the chocolate mixture. Sift in the flour and fold it in gently.

3 Spoon the mixture into the moulds. Chill in the fridge for 1 hour or until firm.

4 Preheat the oven to 200 °C. Transfer the moulds to a baking tray and bake for 12 minutes or until risen.

5 Turn out onto individual plates and serve.
