Cinnamon and ginger fudge squares

These delectably sweet treats are so easy to make.

Makes 18 Preparation: 5 min Cooking: 20 min

  • 250 g butter
  • 160 ml (? c) castor sugar
  • 250 ml (1 c) self-raising flour
  • 250 ml (1 c) flour
  • 7 ml (1½ t) ginger
  • 5 ml (1 t) cinnamon
  • Topping
  • 80 ml (? c) golden syrup
  • 375 ml (1½ c) icing sugar
  • 100 g butter

Preheat the oven to 180 °C. Grease a 19 x19 cm pan.

1 In a bowl rub the butter, castor sugar, flours and spices together until it has the consistency of breadcrumbs.

2 Press the mixture into a pan and bake for 20 minutes.

3 Topping In a pot heat the golden syrup, icing sugar and butter, stirring until bubbly. Pour over the base and set in the fridge for 2 hours. Then cut into bars.
