Citrus juice delight

Not only is this pud delicious - it'll give you a bit of a vitamin C boost too.

Serves: 6 Preparation: 10 min Cooking: 30 min

  • 3 eggs, separated
  • 500 ml (2 c) castor sugar
  • 375 ml (1½ c) milk
  • 80 ml (? c) flour
  • 310 ml (1¼ c) orange juice
  • 30 ml (2 T) lemon juice
  • zest of 1 lemon
  • 45 ml (3 T) butter, melted

Preheat the oven to 180°C and grease 6 ramekins.

1. In a mixing bowl beat the egg yolks and castor sugar until light and fluffy. Add the milk and beat until the sugar has dissolved.

2. Add the flour and mix until smooth. Mix in the orange juice, lemon juice, zest and melted butter.

3. Beat the egg whites until stiff peaks form and fold it into the batter ? do not stir. Pour the mixture into the ramekins, place it in a bain-marie and bake for 30 minutes or until golden brown.
