Citrus-stuffed fish

In stead of sprinkling some citrus over your next fish dish - why not use it as part of a delicious stuffing?

Preparation time: 10 min

Cooking time: 15 min

Serves 4

4 baby hakes, cleaned

1 lemon, zest and sliced

1 orange, zest and sliced

30 ml (2 T) garlic chives, chopped

1 red onion, chopped

20 g grapes

handful parsley and basil

45 ml (3 T) olive oil

salt and pepper

crusty bread to serve

1      Preheat the grill. Place the orange and lemon zest and slices in a food processor with the chives, onion, grapes and herbs and blitz until chopped. Stuff the four hakes with the mixture and place them on a baking sheet.

2      Drizzle the fish with the oil and season with salt and pepper. Place in the oven for 15 minutes.

3      Serve immediately with crusty bread to mop up the fish juices.
