Classic braai marinade

This marinade is perfect for chops or kebabs.

Enough for about 1,5 kg chops or kebabs Preparation time: 15-20 min Cooking time: about 5 min Standing time: overnight

  • 45 ml (3 T) cooking oil
  • 45 ml (3 T) red wine vinegar
  • 30 ml (2 T) Worcester sauce
  • 60 ml (¼ c) tomato sauce
  • 5 ml (1 t) Dijon mustard
  • 5 ml (1 t) turmeric
  • 10 ml (2 t) mild curry powder
  • 1 onion, sliced in rings
  • 2 garlic cloves, finely chopped
  • 30 ml (2 T) apricot jam
  • salt and freshly ground black pepper

1 Mix the ingredients in a saucepan and bring to the boil.

2 Reduce the heat and simmer for about 5 minutes. Season to taste with salt and pepper.

3 Cool completely.

4 to use Pour the marinade into a large bowl with a lid. Add kebabs or chops and marinate in the fridge overnight. Braai over hot coals.
