Corn meal bread muffins

So easy to make and totally delicious!

Preparation time: 15 min

Baking time: 20 min

Makes: 12

375 ml (1½ c) plain flour

250 ml (1 c) corn meal/fine maize meal

a pinch of salt

60 ml (¼ c) baking powder

110 g sugar

500 ml (2 c) milk

2 eggs

110 g butter, melted

1 can (331 g) sweet corn

Preheat oven to 200°C. Grease a muffin pan and line with baking paper cases.

Combine all the ingredients except the sweet corn in a large mixing bowl.

Mix for 10 minutes or until smooth.

Stir in the sweet corn.

Pour the mixture into the prepared cases and bake for 20 minutes in the oven or until golden.
