Creamy butter chicken

Estelle Potgieter of East London often makes this creamy butter chicken dish.

  • Serves 4
  • Preparation time: 10 min
  • Cooking time: 30 min

30 ml (2 T) butter

2 large onions, chopped

750 g chicken breast fillets,

cubed

2 ml (½ t) ground cumin

2 ml (½ t) ground coriander

2 ml (½ t) chilli powder

2 ml (½ t) turmeric

5 ml (1 t) garlic flakes

5 ml (1 t) sugar 1 can (65 g) tomato paste 250 ml (1 c) cream rice to serve handful of fresh coriander to serve

  1. Heat the butter in a saucepan and fry the onions until translucent. Add the chicken and stir-fry for a few minutes.
  2. Add the spices and sugar and stir-fry for a few minutes.
  3. Add the tomato paste and cream. Simmer slowly over medium heat for 15 minutes.
  4. Serve with fresh coriander.
