Creamy butternut and spinach dish

We added strips of chicken to the mixture. A great way to ensure kids eat their greens.

Preparation time: 5 min

Cooking time: 30 min

Serves: 6

1 medium butternut, peeled and cubed

10 ml (2 t) olive oil

15 ml (1T) ground cumin

15 ml (1 T) ground coriander

5 ml (1 t) fresh garlic paste

500 g spinach, finely chopped

Salt and pepper to taste

30 ml (2 T) ground almonds

125 ml (½ c) fresh cream mixed with 15 ml (1 T) cornflour

4 chicken breast fillets, cut into strips

Boil the butternut in salted water until cooked, strain and leave to cool.

In a saucepan heat the oil, add the spices, garlic and spinach and stir-fry for a few minutes.

Add the butternut, almonds and cream mixture. Stir well and add salt and pepper to taste.

Fry the chicken strips in butter and add them to the butternut mixture. Serve with rice.

Tip: Use beef or pork strips instead of the chicken strips.
