Creamy chocolate mousse

Smooth, chocolatey goodness...

Serves: 4 Preparation: 10 min Cooking: 10 min

  • 125 ml (½ c) cream
  • 4 eggs, separated
  • 45 ml (3 T) strong coffee
  • 60 ml (¼ c) caster sugar
  • a pinch of salt
  • 120 g dark chocolate, melted

1. Beat the cream until stiff peaks form, then chill until needed. Place the egg yolks, coffee, ½ the sugar and the salt in an ovenproof bowl. Place the bowl over a pot of simmering water and whisk continually until doubled in volume.

2. Remove from the heat, add the chocolate and stir to combine. Beat together the egg whites and remaining sugar. Fold the egg whites into the whipped cream, then gently fold into the chocolate mixture.

3. Place in a large bowl and chill for 2 hours or until set.
