Creamy potato bake

Serve this as a side dish for a braai or any other main meal.

Serves 6-8 Preparation time: 15 min Cooking time: 40 min

  • 250 g bacon
  • 2 red onions, sliced
  • 2 garlic cloves, crushed
  • 2 kg potatoes, peeled, cut into wedges and parboiled
  • salt and pepper
  • 250 ml (1 c) cream
  • 50 g grated parmesan cheese
Preheat the oven to 200 °C. Grease an ovenproof dish. Fry the bacon until crisp and set aside. Fry the onions and garlic in the same pan until done and set aside. Season the potatoes with salt and pepper. Place the potatoes in the ovenproof dish, alternating with the bacon and onion mixture. Pour over the cream and sprinkle the cheese on top. Bake for about 20-30 minutes or until the potatoes are golden and warmed through. Serve as a side dish.
