Serves: 4-6 Preparation: 5 min Cooking: 20 min

  • 6 hake fillets
  • salt and freshly ground pepper
  • 375 ml (1½ c) self-raising flour, extra for dusting
  • 250 ml (1 c) ginger ale
  • oil, for deep frying

1. Season the fish with salt and pepper and dust lightly in flour.

2. Sift the flour into a large bowl. Whisk in the ginger ale to form a thick batter; it should coat the back of a wooden spoon.

3. Thickly coat the fish in the batter. Heat the oil and fry the fish fillets for 5 minutes on each side. Remove from the pan and drain on a paper towel. Serve with chips.
