Crumbed chicken skewers

These chicken skewers are so much fun - they're great for kiddies' suppers or even a quirky dish for dinner parties

Makes 16-20

Preparation time: 30 min

Chilling time: 15 min

Cooking time: 30 min

LOLLIES

  • 250 ml (1 c) cooked jasmine
  • rice
  • 4 chicken breast fillets, cubed
  • 15 ml (1 T) lemon juice
  • 5 ml (1 t) garlic and ginger paste
  • 2 ml (½ t) seeded and
  • chopped green chilli
  • 60 ml (¼ c) chopped fresh coriander
  • 3 ml (generous ½ t) ground cumin
  • 1 egg, lightly whisked
  • salt and freshly ground
  • black pepper

COATING

  • 1 egg, lightly whisked
  • white breadcrumbs to coat
  • oil for frying

1 LOLLIES Purée ingredients in a food processor until fine.

2 Shape the mixture into oval rolls.

3 COATING Dip the chicken rolls in the egg, then coat in the breadcrumbs. Chill for 15 minutes.

4 Heat enough oil for deepfrying and fry the chicken rolls until golden brown and done. Drain and insert wooden skewers into the rolls.

5 Serve with a dip made of Greek yoghurt, chopped or grated cucumber
