If you struggle to get your kids to eat salad, this yummy recipe from Checkers will certainly change their minds!

You'll need:

30 ml (2 T) soy sauce

45 ml (3 T) red wine vinegar

60 ml (1/4 c) canola oil

45 ml (3 T) honey or brown sugar

1-2 garlic cloves, crushed

1-2 ml (1/4-1/2 t) mustard powder

For the salad you'll need:

1 packet (73 g) two-minute noodles, broken into pieces

1/2 cabbage head, finely shredded

1 red onion, chopped or thinly sliced

1 can (400 g) whole-kernel sweetcorn, drained

A few piquanté peppers, chopped

A handful of cranberries and sultanas or Turkish apricots

A handful of sunflower and pumpkin seeds, toasted

A few whole pistachio nuts (optional)

Preheat the oven grill. Dressing Put all the ingredients in a glass jar, seal and shake until well blended. Set aside. Salad Spread the noodles on a baking sheet. Grill rapidly under the oven grill until crisp. Set aside. Mix the salad ingredients and pour the dressing over just before serving.
